Macadamian Blondies - Gooey in the middle and crisp on the outside

125g butter
200g white chocolate
280g soft brown sugar
150g self raising flour

1 teaspoon GF baking powder
1 teaspoon xanthan gum
50g dessicated coconut

100g packet macadamian nuts
roughly chopped
3 eggs beaten

  1. Preheat the oven to 180 fan oven
  2. Gently melt the butter and chocolate in a bowl over simmering water
    !! Dont let the water touch the bowl. It burns the chocolate !!
  3. Put the dry ingredients in a large bowl. Add the eggs and beat well.
  4. Add the melted butter and chocolate and mix well. Pour into baking tray
  5. Place in the oven for 35 minutes, being careful not to overbake, as blondies, should be a bit "gooey" in the centre and crisp on the outside.
  6. Leave to cool and cut into squares

Buttermilk Sponge with Philly Filling

The buttermilk makes this sponge delightfully light for a gluten-free cake. Once of the lightest I have made.

120g butter
300g caster sugar
2 eggs
2 teaspoons vanilla bean paste
240ml buttermilk
4 tablespoon cold water
3 tablespoons white wine vinegar
300g rice flower
1 teaspoon xanthan gum
1 teaspoon GF
bicarbonate of soda

Icing

250g icing sugar
50g butter
125g Philadelphia cream cheese

  1. Preheat the oven to 150 C fan oven. Prepare 2 x 20cm cake tins.
  2. Beat together the butter and sugar. Add the eggs, one at a time, beating well between each addition. Add the vanilla and beat well.
  3. In a separate bowl, mix together the buttermilk, water and vinegar.
  4. Sift together the flour xanthan gum and bicarbonate of soda. Add half to the bowl along with the half the buttermilk mix and gently fold in. Add the other half of the flour and buttermilk and fold in. Divide between the two cake tins and smooth over evenly. Place in the oven for 40 minutes.
  5. Leave to cool
  6. Beat together the icing ingredients and spread ver one of the cakes. Spread the jam over the other one and sandwich together.
